It's been a long time. We're now two weeks into my shop being open and I could not be happier. I've got a really great team of passionate and creative butchers, and we've been received really well in our new neighborhood.
We're having so much fun. We've gotten in some of THE BEST grass fed beef and heritage breed pork I've seen in years. Right away we've been busier than we had hoped for. And we had a really great write up in LA Weekly. [Click here to read the article.]
But here's something I was not expecting! The level of inspiration and admiration I get to experience everyday lately is staggering.
Everyone who walks through the front door of Standing's Butchery is engaging in an incredibly inspiring act. (At least, to me.) They're using their buying habits to directly express their value system.
It's less convenient, and more expensive to shop at my store. And most of my customers are already probably in a Whole Foods or similar grocery place at least once a week. But I get to meet so many people everyday who are willing to forgo convenience and saving a few dollars to support a small local business, small farmers, and more ethical meat.
The level of trust and integrity it takes for someone to come to my shop and open that front door makes me feel so good about, well, pretty much the whole world. I say trust: Because they trust me to be their direct link to the farmers raising the food they feed themselves and their families. Integrity: Because, as we all know, it's often so hard to "walk the walk" and actually make our actions align with our thoughts and beliefs.
So. On this day after Thanksgiving, I am still feeling so very thankful and grateful. Optimistic, and inspired.
We'll get back to some meat talk very soon. I'll probably want to talk about sausages next. We've been making some really amazing ones. But, for now, let's leave with a quick introduction to the Standing's team. These guys truly are the best in the biz.
